I am Andreas Behringer from Simply Knives. I am a custom knife maker from Germany. I make different styles of knives from chefs knives, outdoor and hunting knives to specialized knives for artisans. This site tells my story of how I started into custom knife making, my failures, my success, and my progress.
Now to something completely different… Many of you know me as a knifemaker. I’ve shared with you my leatherwork for knives, small wallets, and even custom sheaths for lighters. But my passion for craftsmanship doesn’t stop there—I love exploring new projects and materials. My latest passion? Creating handmade journaling notebooks through traditional bookbinding.

A 2024 remake of my Signature model. It combines the lines of the Tigershark model with the short blade and handiness of an EDC knife. The handle was made out of bog oak and red and white paper micarta liners. Read my blogpost about making this EDC Signature knife.
